"Stable" here has to be in quotes. As far as I know, there's no coin fully backed with reserves in another form of value. The biggest, Tether, has been ducking audits (and lying about it).

There was one recently (I can't remember which) that promised that you could exchange their coin 1:1 at any time for dollars -- BUT the exchange took three weeks. That's exactly the trick Mt. Gox used to steal a half-billion dollars in 2014.
