I'm of the opinion that the theme doesn't matter that much, so you might as well start off with a free one. You'll generally be able to switch themes later without much trouble, unless you start off using theme-specific features of a paid theme.

As for educational materials, you can't go wrong with the WordPress courses on LinkedIn Learning (subscription required).
