Your post piqued my interest, so I did a little digging. The history of
the coupe seems to start with a horse-drawn buggy that provided for one
or two passengers in a glassed-in compartment, and the driver in an
outside seat to drive the horses.
With the advent of horseless carriages, the coupe became motorized but
the human complement remained the same: the driver and one or two
passengers. The class is defined as a two-door vehicle, with limited
rear seating where available.
After looking at what car.com shows as coupes under 30K, the only
example currently available for sale that I would consider is the Cooper
Mini Coupe. Unlike most of the cars in this class, I'm able to get into
and out of the Mini without twisting my legs. Personal consideration.
What do I drive today? A Toyota Sienna XLE with all the rear seating
removed (cargo configuration; ot comes as a seven-place bus). I'm
forever hauling stuff around, including occasionally a 128-pound dog,
which is why there is a wire partition between the cargo compartment and
the front seats.
